Cauliflower Flax Bread (or Pizza Crust) Recipe

  • 1 large head of cauliflower (riced, instructions below)
  • 1/2 cup almond meal or almond flour
  • 1/4 cup coconut flour
  • 1/4 cup flax meal
  • 4 eggs
  • Herbs and spices to your liking (garlic, salt, pepper, oregano, rosemary, nutritional yeast etc...)
  • Sesame seeds (if making buns)

Preheat oven to 350

Cut cauliflower into florets and blend/process until it's a mealy rice like consistency (I drop the florets into a blender on the lowest speed).

For Pizza Crust: On a greased baking sheet, place dough and flatten out with hands about 3/4" thick, should almost cover 1-11x16 cookie sheet. Bake for 60 - 65 minutes or until brown.

For individual size pizzas: Portion out into 4 balls. On 2 greased baking sheets flatten into 3/4" thick crusts. Don't make them too thin or they will fall apart. Bake for 60-65 minutes

For buns: Portion out 8 balls. On 2 greased baking sheets flatten into 3/4" thick circles and top with sesame seeds. Bake for 55-60 minutes.

Remove from oven and let cool on a cooling rack or they will get soggy.
