Two Ingredient Pancakes Recipe

  • 1 ripe banana
  • 2 eggs

Heat your pan or skillet over medium heat and coat with bacon grease or coconut oil. You want it nice and hot before you pour on the batter.

Mash the banana well and mix the eggs in. It will be a little lumpy that's ok.

You can add in any non chunky ingredients if you like. Cinnamon, vanilla, unsweetened cocoa powder, nutmeg etc. If you'd like to add in chunky ingredients such as nuts, sprinkle them on when you first pour the batter into the pan.

Use a tablespoon and measure out 2 scant tablespoonfulls of batter per pancake. You may need to shape them with your spatula, sometimes one will spread out in crazy directions. Let cook about 1 minute or until golden brown. Gently flip and cook another minute. Makes about 10 3-4 inch pancakes

Stack and enjoy! These pancakes are sweet enough because of the banana and don't need syrup. Feel free to top with sauteed apples, coconut oil, almond butter or nuts.
