Cinnamon Apple Roll-up with Coconut Cream Recipe

  • 3 eggs
  • 1 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/2 apple minced
  • 1 tsp coconut oil
  • Almond butter for spreading
  • 1 handful of pecans chopped
  • 1-2 tbsp coconut cream (recipe in desserts)

In a small saucepan on medium heat cook the apple for 5 minutes or until soft.

Beat the egg, cinnamon and vanilla until well mixed.

On a skillet or pan on med/high heat cook the egg on one side until no longer runny. Remove and place onto a flat surface like a cutting board.

Spread a thin layer of almond butter from edge to edge, sprinkle on the apples and pecans. Roll and slice! This makes a great breakfast and nice snack.
